Simple Rice Pudding Redux |

this one has less vanilla, and a couple of eggs. Ingredients:
1/2 gallon 2% milk |
2 cups white rice |
2 tsp salt |
8 cups water |
2 eggs |
1 cup splenda |
1/2 tsp vanilla |
Directions:
1. cook rice with milk and salt on low-stir frequently. add water in 2 cup increments, over time. after 4 cups aded, it should be pretty thick. 2. hit it with the immersion blender, just a bit. temper beaten eggs, and then carefully add to pot. keep cooking, and add rest of water, over time. when the right texture is reached, kill heat. stir in Splenda, in at least 2 separatescoops-otherwise it clumps. also add vanilla. |
