2 cups chopped carrots |
2 cups chopped potatoes |
1 cup chopped celery |
1 (2 -2 1/2 lb) beef roast |
3 cups beef broth or 3 cups beef stock |
Directions:
1. Prepare the vegetables. It may not be necessary to peel the potatoes depending on the variety you choose, but do peel the carrots (except baby carrots). Combine all ingredients in a 3-1/2 quart crockpot. Add salt and pepper to taste. 2. Cover and cook on LO heat for 8 hours. |
