Buttered muffins for breakfast, yum. BE SURE TO USE THE KIND OF PINEAPPLE THAT COMES IN HEAVY SYRUP! Ingredients:
1/4 cup butter |
2 tablespoons sugar |
1 large egg |
2 cups flour |
1 1/2 teaspoons baking powder |
1/8 teaspoon salt |
1 (8 ounce) can crushed pineapple, not drained |
Directions:
1. Cream butter with sugar. 2. Beat in egg. 3. Stir in flour through pineapple just enough to moisten. 4. Pour batter into greased muffin tins. 5. Bake at 350°F about 30 minutes or until toothpick inserted in center comes out clean. 6. Serve with whipped butter. |
