1 bunch beet |
1/4 cup cider vinegar |
1 tablespoon sugar |
1 tablespoon olive oil |
1/2 teaspoon dry mustard |
salt & pepper |
Directions:
1. While beets are cooking (steam or roast), combine remaining ingredients in a ziplock bag. 2. Cool, peel, and slice beets. Add to vinaigrette. Marinate at least 1/2 hour at room temperature. Store any leftovers in fridge. |
