A very simple salad with a hint of ethnicity-very tasty
Ingredients:
1 medium cucumber, peeled and diced
1 medium tomato, diced
1/2 cup finely chopped parsley
1 teaspoon salt
1 teaspoon ground pepper
3 tablespoons olive oil
1 tablespoon lemon juice
Directions:
1. Combine all ingredients in a bowl and mix well.
