Super easy recipe for migas. I don't like to cook much but these I can whip up in a jiffy. As long as you get te basic recipe down, you can garnish with whatever you want. Ingredients:
1 egg |
2 egg whites |
2 corn tortillas |
1 1/2 tbsp of olive oil |
salt and pepper |
Directions:
1. Drizzle oil into a skillet over medium heat. 2. Tear up corn tortillas into 1 inch pieces or smaller. 3. Fry them till they are soft (I like mine toasty so I get them a little brown on the edges). 4. In a separate bowl, scramble the eggs and egg whites together. 5. Add salt and pepper to taste - usually you just need a little. 6. Pour the eggs into the skillet and stir them all up together. 7. Cook until eggs are ready (again, I like mine a little toasty, so I cook a little longer) |
