Simple Mexican Side Salad |

My friend Matt showed me how to make this. It's great with my black beans and rice! Ingredients:
1/4 cup chunky salsa |
1/4 cup ketchup |
1/4 cup low-fat mayonnaise (i like vegenaise) or 1/4 cup vegan mayonnaise (i like vegenaise) |
12 ounces romaine lettuce |
1 chopped tomato |
1 chopped avocado |
1/2 cup of crushed tortilla chips |
Directions:
1. Mix salsa, ketchup and mayo in small bowl until well blended. Toss with veggies in large salad bowl. Top with crushed chips. |
