Just thought i would share this recipe for meringue that a friend gave me as it is simple and always turns out great - this does enough for two meringue pavlova bases.
Ingredients:
4 egg whites
8 ounces caster sugar
1 dash vanilla extract
1 dash vinegar
Directions:
1. Whisk the egg whites until they are stiff and form peaks.
2. Then whisk in 75% of the sugar, the vanilla and vinegar until mixed.
3. Fold in the remaining sugar then cook on low heat - 100 degrees centigrade for 3 hours.
4. Remove from oven and leave to cool then decorate as wished.
