This salsa is from Salsa Cooking, an amazing Mexican cookbook that has been a stable for me for years. This salsa is easy and contains few ingredients. It provides a fresh and wonderful flavour and pairs well with fish. Ingredients:
2 mangoes, peeled, pitted and diced |
1/2 cup red onion, finely chopped |
1/2 red bell pepper, finely chopped |
2 jalapeno chilies, seeded and finely chopped |
3 tablespoons lime juice |
Directions:
