Simple Low-Fat Turkey Meatballs |

An adaptation from my boyfriend's Greek grandmother's recipe. So simple, even I (a non-cooker) can make them and they still taste great! Ingredients:
1/2 lb all white meat lean ground turkey |
1/2 yellow onion (finely chopped) |
1/4 cup parsley (finely chopped) |
2 garlic cloves |
1/2 teaspoon oregano |
1 egg |
1/2 cup dried italian seasoned breadcrumbs |
1/2 teaspoon salt |
1/2 teaspoon pepper |
olive oil (for browning meatballs, not in mixture) |
Directions:
1. Beat egg in large bowl. 2. Add all remaining ingredients. 3. Mush together well using your hands. 4. Form into 1/2 inch balls. 5. Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet. 6. Put half the balls into the skillet and cook until browned evenly on outside. 7. Remove and add remaining balls. |
