Simple Low-Fat Risotto Rice Pudding |

I don't like my rice pudding full of fruit or cream or nutmeg - I love to have this warm or cold with a big splodge of stewed apple on top. Ingredients:
250 g risotto rice |
80 g sugar |
1 1/8 liters low-fat milk |
Directions:
1. Put the three ingredients in a large ovenproof dish with a lid. 2. Put in moderate oven (170c) for about 90 minutes stirring every 20-30 minutes. 3. It shouldn't form a skin. 4. Take it out when it still looks a bit too liquid - the rice will continue to absorb while it cools. |
