Simple Lentil Barley Soup |

This is a very easy, very cheap, delicious dish that takes 3 minutes to put together and is filling and tasty. It is low in fat and high in fiber. Best of all if all - it only has 5 ingredients! Ingredients:
1 cup lentils (green or french but not red split) |
1 cup barley |
1 t vegetarian bouillon (i use reduced sodium better than bouillon) |
1 dash chipotle powder to taste |
umeboshi plum vinegar to taste |
Directions:
1. Put lentils and barley into a pot and rinse picking out any foreign matter 2. Add 6 cups water and bouillon 3. Simmer for about an hour till nice and thick and all the lentils are done - this may take less time depending on the size of your lentils 4. Add chipotle powder to taste 5. Ladle into bowls and have each person add their own Umeboshi plum vinegar to taste 6. You can also make this in a crock pot set on low. |
