Simple Ginger Chicken Breasts |

Like it says in my profile, I'm not big on measuring, so all measurements are approximate. Play with the recipe until you find what tastes right. No prep necessary, just put in a skillet and go. We normally serve mashed potatoes and another veggie with this for a simple, down-home meal. Ingredients:
3 -5 large boneless skinless chicken breasts |
1/4 cup oil |
red wine vinegar |
1 -2 tablespoon brown sugar |
2 teaspoons nutmeg |
1 -2 tablespoon ginger |
cajun seasoning |
3 -6 drops liquid smoke |
2 -4 garlic cloves, minced |
1 (8 ounce) can mushroom pieces |
1 medium onion, diced |
Directions:
1. Thaw chicken. 2. In a large skillet over med heat, add chicken and oil. Dash red wine vinegar over whole skillet, going around 3-4 times. 3. Add brown sugar, nutmeg, ginger, cajun, and liquid smoke. Cook, flipping regularly. 4. When almost done, add garlic, mushrooms, and onion. 5. Cover. Flip chicken 3-4 more times, cooking until done. 6. Serve. |
