This tomato salsa is excellent for crostini or canapes. It needs to sit overnight to get the best flavor. Ingredients:
1 (14.5 ounce) can diced tomatoes, drained |
1/2 cup olive oil |
1 tablespoon minced garlic |
1 tablespoon chopped fresh parsley |
1 pinch salt |
1 pinch ground black pepper |
Directions:
1. In a medium glass bowl, mix together tomatoes, oil, garlic, parsley, salt and pepper. Cover, and refrigerate overnight, allowing the flavors to 'mix and mingle'. |
