Simple Eggless English Pancakes |

An eggless version of the classic English pancake, which is thinner than its American cousin. Great sweet or savoury, any time any day! Ingredients:
100g plain flour |
200ml semi skimmed milk |
100ml sweetened condensed milk (this is the egg replacement!) |
butter/olive oil/low-cal cooking spray |
tools- non stick pan, pastry brush & spatula |
note-if making savoury pancakes, remember to use unsweetened condensed milk |
Directions:
1. In a large mixing bowl, beat flour, milk and condensed milk till smooth. 2. Heat a non stick frying pan on medium heat. 3. Brush with butter/oil/spray. 4. Add in a few spoonfulls of batter 5. Swirl and tilt pan to creat a thin, even, circular layer. 6. Cook untill golden around edge and cooked in the centre (about 45 secs) and use a greased spatula to flip the pancake over. 7. Cook for a further 20 secs. 8. (If you want to have simple pancakes, then the above is all you need to do, otherwise, after the 1st flip, add the filling of your choice over 1/2 the pancake, fold over the other half and cook till warmed through) 9.
