Easy to prepare but at the same time delicious and useful. It came from the Rector's restaurant in Times Square. The year 1928. Ingredients:
2 tablespoons butter |
1 1/2 tablespoons flour |
1 tablespoon curry powder |
1/4 teaspoon salt |
1 cup chicken stock |
1 egg yolk |
2 tablespoons heavy cream |
Directions:
1. melt butter. 2. blend in flour, curry powder, and salt. 3. slowly add hot stock and bring to boiling. 4. boil 2 minutes. 5. remove from heat 6. add egg yolk lightly beaten with cream. |
