This is a dip I've had in my collection for a few years now, and it always pleases my guests. Fairly easy to prepare, it is best with table water crackers, melba rounds or even a vegetable tray. Ingredients:
1 8 oz package cream cheese |
1 cup mayonnaise |
2 medium cucumbers, peeled, seeded and finely diced |
2 tb chopped green onion ( 3 or 4 is good ) |
1 tb lemon juice |
2 tsp fresh chopped dill or 1/2 tsp dried dill weed |
1/2 tsp tobasco or other hot pepper sauce |
Directions:
1. Set cream cheese out to soften 2. Peel, seed and dice the cucumbers 3. Chop the onions and dill ( if using fresh dill ) 4. In a food processor, beat the cream cheese until smooth and creamy 5. Add mayonnaise and process on low until blended 6. Remove from food processor, place in a bowl and add remaining ingredients 7. Chill for at least 2 hours to blend flavors 8. Serve with crackers or a veggie tray - yields about 2 1/2 cups dip |
