I have tried many coleslaw recipes in my day and they are never quite right . Whenever I need coleslaw for a side I buy it from our favorite Italian carryout restaurant. I have been know to just go in an request a pint or 2 of coleslaw to top off my yummy Slow Cooked / Crock Pot Pulled Pork sammies. One day, the owner told me what he used. VOILA, I duplicated it! No salt, pepper, pickles,vinegar, etc. needed. I know it sounds impossible, but hey, this is the way I like it! It will acquire a tang as it sits resting in the fridge. It's even better the next day. Every now and then I add crumbled blue cheese to it. Very tasty but don't top my pulled pork sammies with the blue cheese slaw. That would be rather funky! Ingredients:
5 cups packaged coleslaw mix, use entire package |
3/4 cup real mayonnaise, do not substitute, can use light |
2 tablespoons whole milk |
1/2 cup blue cheese (optional) |
Directions:
1. Open up the bag and dump it into a large bowl. 2. Combine mayo and milk. 3. Pour over cabbage slaw and toss until coated. Don't be tempted to add more mayo. that can be done later if needed. It will not be heavily coated but some moisture will release itself from the cabbage and it will be saucier. 4. Chill for at least 60 minutes until ready to serve. |
