This is so easy to make and it's really tasty...Adapted from a Martha Stewart recipe with a few small changes to suit our taste. Ingredients:
1 1/2 boxes frozen spinach, thawed and drained of all liquid |
2 tbls. butter |
1 small onion, finely chopped |
2 cloves garlic, finely chopped |
salt and pepper |
pinch of red pepper flakes |
4 oz. cream cheese, cut into pieces |
1/2 cup milk |
pinch ground nutmeg |
Directions:
1. In skillet, heat butter over medium heat 2. Add onion, garlic and red pepper flakes; season with salt and pepper 3. Cook until tender 4. Add cream cheese and milk; cook, stirring, until cream cheese is melted and smooth 5. Stir in spinach to combine 6. Simmer over medium heat until mixture thickens 7. Add nutmeg; season with salt and pepper |
