Ingredients:
1 cup fresh or thawed frozen corn
1/4 cup finely chopped red bell pepper
2 tablespoons chopped chives
1 tablespoon finely chopped shallot
1 tablespoon finely chopped seeded jalapeƱo
1 tablespoon cider vinegar
1 teaspoon olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper
Directions:
1. Stir together all of the ingredients; let stand at least 20 minutes before serving.
