Fast and easy soup. Ingredients:
4 ears corn (or 10 oz.) |
1 small potato, peeled and cubed |
1/2 onion, chopped |
1/3 cup water |
2 teaspoons chicken bouillon granules |
1/4 teaspoon black pepper |
1 3/4 cups milk |
1 tablespoon margarine |
2 tablespoons flour |
Directions:
1. Cut and scrape corn from cob. 2. In a large saucepan, combine corn, potato, onion, water bouillon and pepper. 3. Bring to a boil, then reduce heat. 4. Cover and simmer 10 minutes, until tender, stirring occasionally. 5. Stir in 1 1/2 cups of the milk and the margarine. 6. Combine the remaining 1/4 cup milk with the flour. 7. Stir into corn mixture. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. |
