This is a simple coleslaw with a few tweaks to make it a little out of the ordinary. I always buy bagged coleslaw, but chopping up cabbage and grating carrots would only add a few minutes to prep time. Light mayo and fat-free yogurt are fine in this recipe. Ingredients:
1 bag coleslaw mix (white cabbage, red cabbage & carrot) |
2-4 tbsp fresh mint, chopped |
1/2 cup mayonnaise or 1/4 cup mayo and 1/4 cup plain yogurt |
1 tbsp white vinegar |
1-2 tsp sugar |
1/2 tsp caraway seeds, ground in mortar & pestle |
1/2 tsp dry mustard |
1/4 tsp freshly ground pepper |
1/4 tsp salt |
Directions:
1. In a large bowl, combine mayo and next 6 ingredients; whisk to blend. Check seasoning and adjust to taste. Add coleslaw mix and stir to blend. Sprinkle mint over top and toss lightly. Garnish with more mint if desired. |
