Simple Cinnamon Banana Bread |

I have been trying to include my 2-year-old son in my kitchen activities more often, because he loves it so much! We whipped up this banana bread by mixing everything together with two forks in a bowl on the kitchen floor, and let me tell you, it is possibly the best banana bread I (we) have ever made! Read more ! I guess that saying about love being the best ingredient has some kind of truth to it :) PS...I call it cinnamon banana bread, because I let Liam have the liberty of adding the cinnamon, and it was therefore a prominent ingredient. Ingredients:
1 large or 2 small very ripe bananas |
1/3 cup melted butter |
1 cup brown sugar |
1 egg, beaten |
1 tsp vanilla |
1 tsp baking soda |
1/2 tsp salt |
1 cup unbleached all-purpose flour |
1/2 cup whole wheat flour |
as much ground cinnamon as you can handle (we probably added at least 2 tbsp) |
1 tsp ground nutmeg (optional) |
1/2 tsp ground cloves (optional) |
butter or baking spray, for greasing the pan |
Directions:
1. Grease your loaf pan and preheat the oven to 350 degrees Fahrenheit. 2. Mash up the banana(s) with a fork in a large bowl. Mix in the egg, sugar, butter, vanilla, and spices. 3. In a separate small bowl, combine the flours and baking soda. 4. Mix the dry ingredients into the wet ones a bit at a time, until just combined. 5. Pour the batter into the loaf pan and swirl some more cinnamon on top with a fork, if you want. Place the loaf pan on a baking sheet for easy retrieval from the oven. 6. Bake for 55-60 minutes, or until a toothpick poked into the center comes out clean. 7. Serve hot or cold :) |
