Simple Chocolate Zucchini Bread |

Indulge in this yummy chocolate, yet still healthy snack. This bread would be great served with a few fresh cut strawberries on top to give it a little more of a sweet taste. Great for an afternoon snack or even breakfast. Ingredients:
2 cups zucchini |
2 egg whites |
1 cup whole wheat flour |
1/2 cup all-purpose flour |
1/2 cup sugar |
1/2 cup brown sugar |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
3 tablespoons unsweetened cocoa powder |
1/2 teaspoon baking soda |
1/4 teaspoon baking powder |
8 ounces nonfat yogurt |
Directions:
1. Preheat oven at 350°. 2. Prepare pan 2-3 muffin pans or 1 loaf pan with cooking spray and flour; set aside. 3. In a mixing bowl, combine flour, sugar, cinnamon, baking soda, nutmeg, baking powder & cocoa. 4. In another mixing bowl, combine zucchini, yogurt & egg white. 5. Mix dry ingredients with wet ingredients just until moistened. 6. Pour batter into prepared pan(s). 7. Bake 60 minutes. 8. Cool for at least 10 minutes. 9. ENJOY! |
