Simple Chicken With Veggies |

Quick, fast, and simple chicken. I found this in Healthy Cooking Magazine September 2009 and I loved it! Ingredients:
2 boneless skinless chicken breast halves (6 oz each) |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons dry breadcrumbs |
2 teaspoons parmesan cheese |
2 teaspoons italian seasoning |
2 teaspoons olive oil |
3 cups baby spinach |
2 plum tomatoes, chopped |
2 garlic cloves, minced |
Directions:
1. Flatten chicken to 1/4 in thickness; sprinkle with salt and pepper. 2. In a shallow bowl, combine bread crumbs, cheese and Italian seasoning. Coat chicken in bread crumb mixture. 3. In a large non stick skillet coated with cooking spray, cook chicken in 2 tsp old over medium heat for 3-4 min on each side or until no longer pink. Remove and keep warm. 4. Saute spinach in remaining oil just until wilted. Stir in tomatoes and garlic; cook 3 minutes longer. Serve with chicken. |
