A healthy way to use some leftover chicken for a light lunch. Ingredients:
1/2 boneless skinless chicken breast |
1/2 tomato |
1/2 cucumber |
1 cup lettuce (or mixed salad) |
2 tablespoons fat-free vinaigrette-style dressing |
Directions:
1. Slice tomatoes and cucumbers. 2. Mix all ingrediants together and enjoy! 3. Croutons are optional. |
