A healthy way to use some leftover chicken for a light lunch.
Ingredients:
1/2 boneless skinless chicken breast
1/2 tomato
1/2 cucumber
1 cup lettuce (or mixed salad)
2 tablespoons fat-free vinaigrette-style dressing
Directions:
1. Slice tomatoes and cucumbers.
2. Mix all ingrediants together and enjoy!
3. Croutons are optional.
