Easy-to-make chicken salad. I use chicken breasts that I've poached with onion, celery and a bay leaf, then cooled and chopped. You can use low-fat mayo to reduce calories. Ingredients:
2 cups chicken, chopped |
1/8 cup mayonnaise |
1/6 cup miracle whip |
2 tbsp mustard |
2 tbsp lemon juice |
1/2 cup onion, chopped |
1 dash pepper |
Directions:
1. Mix mayonnaise, Miracle Whip, mustard, lemon juice, and pepper until blended. 2. Pour dressing over chicken and onion in medium bowl; mix until chicken and onion are coated. Serve on bread or sandwich roll. |
