This one comes from Del Pino's. I added on some seasoning. Great on a cold day. This is a great recipe for using up leftover (deboned) chicken. Ingredients:
2 cups chicken, cooked, diced |
60 ounces chicken broth |
2 medium carrots, sliced |
2 celery ribs, diced |
1 medium onion, chopped |
1 cup egg noodles (dry) |
1 tablespoon dried parsley |
1/2 teaspoon seasoning salt (optional) |
Directions:
1. Heat all ingredients except pasta in a large cooking pot. 2. Cover and simmer for about 10 minutes. 3. Add pasta and allow to continue at a simmer (uncovered) until noodles are tender (about 10 minutes). 4. Serve. 5. NOTE: If you're using regular chicken broth (not low-sodium) you'll likely not need the seasoned salt. |
