Simple chicken enchiladas. Use leftover chicken from a rotisserie chicken eaten the night before. Ingredients:
2 lbs chicken, shredded |
10 flour tortillas |
1 cup cheddar cheese, shredded |
19 oz enchilada sauce, green chile |
Directions:
1. Shred chicken, heat in pan, season with cumin, salt, Worcestershire's sauce, and chile pepper 2. Divide evenly between tortillas, roll, put in 9x13 inch pan 3. Cover with 1/2 cup cheese 4. Cover with enchilada sauce 5. Cover with remaining 1/2 cup cheese 6. Bake in oven for 30 minutes at 350 degrees |
