This is as the name says...simple. Have fun gardening or marketing and pick the tenderest swiss chard or endive you can find. Enjoy the freshness of the food. Ingredients:
1 lb swiss chard |
4 quarts boiling water |
1/4 lb bacon, cooked and crumbled and bacon grease (optional) |
butter (optional) |
salt and pepper |
Directions:
1. clean chard by rinsing under cold water and shaking off liquid. trim off ends and place in large pot of boiing water. 2. blanch about 2 min, remove and strain over collander. 3. add crumbled bacon pieces and a bit of the bacon fat for taste 4. or. 5. add butter to taste. 6. ****replace swiss chard with endive or do a combination of the 2. This make a nice alternative to salad. 7. times are approximate as I usually do enough for 8 people and in a large vat as our main meal portion. |
