Ingredients:
2 cup(s) all-purpose flour
2 cup(s) granulated sugar
1 teaspoon(s) baking powder
1 teaspoon(s) salt
1 teaspoon(s) baking soda
1 teaspoon(s) ground cinnamon
3 cup(s) carrots finely shredded
4 eggs
1 cup(s) vegetable oil
Directions:
1. Stir together flour,sugar,baking powder,baking soda,cinnamon, and salt. Add carrot,oil, and eggs. Mix till moistened; beat at medium speed of electric. User for 2 minutes. Pour into greased and floured 13X9X2-inch baking pan. Bake at 325 for 50 to60 minutes. Cool throughly. Spread with Cream Cheese Frosting.
2. Cream Cheese Frosting: Soften one 3-ounce package cream cheese and 1/4 cup butter or. Margarine; beat together until fluffy. Slowly beat in 2 cups sifted powdered sugar til smooth. Stir in 1 teaspoon vanilla.
