Eggplant is filled with vitamins, minerals and antioxidants that can help lower cholesterol and prevent cancer. Ingredients:
1/4 c no-salt-added broth (beef, vegetable or chicken) |
1 medium eggplant, cut into 1/2 inch slices |
juice of 1 lemon |
Directions:
1. Preheat oven to 425 degrees F. 2. Pour the broth into a roasting pan. 3. Place the eggplant slices into the pan, lightly coating them on both sides with the broth. 4. Bake for 10 minutes. 5. Turn eggplant slices over, and bake for another 10 minutes. 6. Add lemon juice and let set for a few minutes. |
