These muffins are great before school or for weekend breakfasts. Recipe source: Bon Appetit (November 1984) Ingredients:
1 cup brown sugar, packed,divided |
1/2 cup corn oil |
1 egg, beaten |
1 teaspoon vanilla |
1 1/2 cups flour |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 cup apple, peeled and chopped |
1/2 cup buttermilk |
1/4 cup walnuts (optional) |
1/2 teaspoon cinnamon |
Directions:
1. Preheat oven to 325-degrees F. 2. Grease muffin tins or use paper liners. 3. In a large bowl, blend 3/4 cup brown sugar, oil, egg and vanilla with a wooden spoon. 4. Add flour, baking soda and salt. 5. Stir in apple and buttermilk and mix throughly until combined well. 6. Spoon batter into prepared muffin tins. 7. In a small bowl combine remaining 1/4 cup brown sugar with remaining ingredients (walnuts and cinnamon). 8. Sprinkle over muffins. 9. Bake for 30-40 minutes or until muffins are browned and toothpick comes clean when inserted in middle. |
