This is a fruity Easter Cake Ingredients:
2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon salt |
3/4 cup butter |
3/4 cup white sugar |
4 eggs |
1 teaspoon vanilla extract |
2 cups golden raisins |
1/4 cup raisins, chopped |
1/2 cup chopped candied mixed fruit peel |
Directions:
1. Preheat oven to 325 degrees F (165 degrees C). Grease one 9 inch tube pan. 2. Sift flour, baking powder, and salt together. 3. Cream butter or margarine and sugar together. Beat in the eggs one at a time. Stir in the vanilla and the sifted flour mixture. Fold in the raisins, and candied peel mixing well. Spoon batter into the prepared pan. 4. Bake at 325 degrees F (165 degrees C) for 1 hour and 45 minutes to 2 hours. Makes about 16 servings. |
