I found this recipe from Ragu in a magazine. It's a great warm meal for a wintry cold day. It's easy to make and uses ingredients you probably already have. Ingredients:
1 lb boneless chicken breast, cut into 1-inch pieces |
2 garlic cloves, minced |
2 tablespoons olive oil |
4 medium potatoes, cut 1/2-inch cubes (about 4 cups) |
1 medium red bell pepper, diced |
1 (27 2/3 ounce) jar pasta sauce |
1 lb fresh cut green beans or 1 lb frozen green beans |
1 teaspoon dried basil |
salt and pepper |
Directions:
1. In a 12 skillet, saute chicken and garlic in olive oil until chicken is lightly browned. 2. Added potatoes and peppers; continue to cook about 5 minutes, stirring occasionally. 3. Add sauce, basil, green beans, salt and pepper; bring to boil. 4. Reduce heat to medium; cover and simmer for 35 minutes or until chicken is thoroughly cooked and potatoes are tender. 5. Stir occasionally. |
