Simmered Kumquats and Prunes |

A lively way to start your morning. From the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Overnight soaking time not included in preparation time. Ingredients:
1 cup prune, pitted |
1/4 cup sugar |
1/2 cup orange juice |
6 kumquats, sliced |
Directions:
1. Cover prunes with cold water and soak overnight. 2. Simmer until tender in the same water. 3. Add half the sugar and cook five minutes longer. 4. Remove prunes; measure 1/2 cup juice, add orange juice, remaining sugar and kumquats and simmer until kumquats are tender. 5. Add prunes. |
