This is one of our favorite salads. We eat it year-round with just about any kind of main dish. Ingredients:
6 cups triple-washed baby spinach |
6 ounces swiss cheese, julienned |
6 ounces cheddar, julienned |
2 cups seedless grapes, halved |
dressing |
1/4 cup cider vinegar |
1/2 cup vegetable oil |
2 tsp. dijon mustard |
2 tsp. packed brown sugar |
4 slices bacon, fried crisp, drained and crumbled |
2 tbs. sliced green onions |
Directions:
1. To prepare dressing, whisk together vinegar, oil, mustard and brown sugar. Stir in onion. Refrigerate. 2. In a large bowl, combine spinach, cheeses and grapes. Toss with dressing, but not til just before you serve. Sprinkle bacon crumbles over all. |
