Silverbeet and Fetta Triangles |

Fresh silverbeet makes a very tasty change to spinach in this recipe. Ingredients:
1 small bunch silver beet |
200 g greek feta cheese |
2 slices frozen puff pastry sheets |
1 egg |
1/2 lemon, juice of |
1 teaspoon salt |
1 teaspoon ground black pepper |
2 tablespoons butter |
1 tablespoon olive oil |
Directions:
1. Clean and roughly chop silverbeet. 2. Melt butter with olive oil in large saucepan. 3. Saute silverbeet until it reduces in size and goes limp. 4. Add salt, pepper and lemon juice. 5. Remove from heat and allow to cool. 6. Preheat oven to 220 degrees C. 7. Combine with crumbled feta cheese. 8. Divide mixture into each puff pastry slice. 9. Turn puff pastry corner to corner to make a triangle and press ends together. 10. Brush with beaten egg. 11. Bake in oven for 20 minutes. |
