I got some new cookbooks this weekend and “Screen Doors and Sweet Tea” had this recipe in it. I had to try it and am so glad that I did. It is absolutely delicious. I altered very little about the recipe. Read more This is the way I made it and it was just great. Ingredients:
2-pints fresh blueberries |
2-cups all purpose flour |
2-tspn baking powder |
1-tspn salt |
1/4-tspn nutmeg |
3-cups sugar, divided |
1-cup milk |
5-tbspn unsalted butter |
1-tspn vanilla |
2-tbspn cornstarch |
1 1/2-cups boiling water |
Directions:
1. Preheat oven to 350degrees. 2. Spread the blueberries in a 9X13-inch baking dish. 3. In a medium bowl, combine the flour, baking powder, 1/2-tspn salt, the nutmeg, 11/2-cups sugar, the milk, butter and vanilla. 4. Mix well and pour over the top of the blueberries. 5. In a small bowl, combine the remaining 1 1/-2 cups sugar, the remaining 1/2-tspn salt and the cornstarch. 6. Sprinkle this mix over the batter. 7. Pour the boiling water evenly over the top of the cobbler. 8. Poke about 10 holes in the batter with the handle of a wooden spoon. 9. Bake for 1 hour. 10. Serve warm with creamy vanilla ice cream as a topper. 11. Susana |
