Sicilian Sweet And Sour Peppers

Agrodolce is the Italian word for sweet and sour. This agrodolce dish is one that originated in Sicily. The sweetness of the dish is enhanced with the introduction of raisins, and textire is added with pine nuts. Read more . Serve it with a crusty Italian bread.
Ingredients:
4 large red bell peppers, seeded and cut into thick strips (3/4 x 4 )
4 tbl. extra virgin olive oil
2 tbl. pine nuts, toasted
3 tbl. raisins (golden preferred, but use what you have), plumped in warm water, drained.
1 clove garlic, finely minced
1 cup white wine vinegar
salt to taste
Directions:
1. Heat the oil in a skillet.
2. Add the garlic and cook briefly until softened.
3. Add the peppers and cook for about 10 minutes.
4. Add salt to taste and cook 5 minutes more.
5. Remove the peppers from the skillet (leaving any juices behind), and set aside.
6. Add the vinegar to the pan and deglaze the pan stirring frequently, add the sugar (careful, this splatters).
7. When most of the vinegar has evaporated, add the peppers, Raisins and pine nuts back to the skillet.
8. Cook for about 2 - 3 minutes more and remove from heat.
9. Let the peppers come to room temperture, place in a serving dish.
10. Serve.
