Sicilian Meat Loaf

Ingredients:
1/4 teaspoon(s) black pepper
1/2 teaspoon(s) dried oregano
2 eggs beaten
1-3 clove(s) garlic, to taste
2 pound(s) lean ground beef
2 tablespoon(s) parsley flakes
1/4 teaspoon(s) salt
8 ounce(s) shredded mozzarella cheese
1/2 cup(s) sliced mushrooms (optional)
3/4 cup(s) soft bread crumbs
1/2 cup(s) tomato or v-8 juice
Directions:
1. Preheat oven to 350.
2. Combine first 8 ingredients.
3. Add beef and mushrooms and mix well.
4. On foil, pat meat mixture to 12"x10" rectangle. Top with 6 ounces of cheese.
5. Starting from a short side, roll up meat using foil to lift and a spatula. Seal edges and ends. Place, seam side down, in 13x9x2 baking pan.
6. Bake at 350 for 1 and 1/4 hours. (center will be pink). Use baster to suck out grease as it accumulates.
7. Sprinkle remaining cheese on top, return to oven until melted.
