Sicilian Gnocchi With Broccoli |

Same diabetic friend same gnocchi recipe. Great results. You can use the pre made, store bought gnocchi or use this recipe: recipe #rz.164220 Ingredients:
2 1/2 lbs broccoli |
1/2 onion |
2 garlic cloves |
2 teaspoons capers |
2 teaspoons currants |
5 cups gnocchi |
Directions:
1. Cut the broccoli into florets and dice the stems into bite size pieces. Place broccoli in a large microwave safe dish. Cover and nuke on high for 5 - 7 minutes. Drain and set aside. 2. Lighlty coat a nonstick skillet with cooking spray. Add the chopped onion and minced garlic. Cook stirring over medium heat until onion becomes soft. 3. Add the broccoli, cpers, dried currants, and reserved gnocchi water (if you've made the recipe same day) recipe #rz.164220 Cook over high heat until water evaporated and the brocoli is crisp. 4. Place the gnocchi in a microwave safe casserole. Spoon the broccoli mix on top and reheat in the microwave for 1 - 2 minutes. Serve immediately. |
