Sicilian Eggplant Cheese Casserole |

A no meat dish that I found in a recipe book that is from Doris Day originally..... I'm eating it as I type . . . yum. Ingredients:
1 c. tiny shell macaroni |
1 medium eggplant |
1 small onion |
3t olive oil |
3 oz tomato sauce, and i added a few fresh tomatoes for flavor & color |
1/4 c parsley |
2 t lemon juice |
1/2 c halved olives |
basil ( to taste ) |
marjoram ( to taste ) |
salt, pepper |
garlic ( to taste ) |
1/2 lb. monterey jack cheese |
1 1/2 c parmesan cheese ( i used less ) |
Directions:
1. Preheat oven to 350' 2. Cook macaroni and drain 3. Cut eggplant into 1/2 in cubes then saute with onion in oil. 4. Combine macaroni , tomato sauce, parsley, lemon juice, olives, basil, marjoram, seasonings. Mix with eggplant mixture. 5. Put in baking dish and top with cheese, or not. 6. Bake for 30 minutes. |
