Sicilian Eggplant Cheese Casserole

A no meat dish that I found in a recipe book that is from Doris Day originally..... I'm eating it as I type . . . yum.
Ingredients:
1 c. tiny shell macaroni
1 medium eggplant
1 small onion
3t olive oil
3 oz tomato sauce, and i added a few fresh tomatoes for flavor & color
1/4 c parsley
2 t lemon juice
1/2 c halved olives
basil ( to taste )
marjoram ( to taste )
salt, pepper
garlic ( to taste )
1/2 lb. monterey jack cheese
1 1/2 c parmesan cheese ( i used less )
Directions:
1. Preheat oven to 350'
2. Cook macaroni and drain
3. Cut eggplant into 1/2 in cubes then saute with onion in oil.
4. Combine macaroni , tomato sauce, parsley, lemon juice, olives, basil, marjoram, seasonings. Mix with eggplant mixture.
5. Put in baking dish and top with cheese, or not.
6. Bake for 30 minutes.
