From the book, Beef Recipes From Across Missouri. This was a 1982 State Cook-off Winner, submitted by Joanne Pagano. This looks really good! Ingredients:
3 lbs beef round steak, cut 1/3 to 1/2 - inch thick |
12 ounces fine breadcrumbs |
2 garlic cloves, chopped |
1 tablespoon parsley flakes |
2 tablespoons romano cheese |
1 teaspoon salt |
1/2 teaspoon pepper |
3/4 cup oil |
3 1/2 cups tomatoes, drained and chopped (2 (14 oz.) |
2 garlic cloves, chopped |
2 tablespoons romano cheese |
1 teaspoon oregano |
salt and pepper (to taste) |
Directions:
1. Cut steak into serving size pieces. 2. Combine bread, garlic, parsley, cheese, salt and pepper. 3. Dip slices of steak into oil and then into bread crumbs. 4. Combine tomatoes, remaining oil (not used in dipping steak) and last 2 cloves of garlic. 5. Layer tomato mixture and meat in casserole. 6. Begin with 3 tablespoons tomato mixture, sprinkle a little cheese, oregano and salt. 7. Continue layers finishing with tomato mixture, cheese, oregano and salt. 8. Cover and bake at 350 for 1 and 1/2 to 2 hours. |
