My daughter mixed this dish together one day and I liked it so much that I make it often.
Ingredients:
2 cups minute rice
2 cups water
onion chopped
rotel tomatoes small can
canned corn 8 0z
canned kidney beans small can (drained)
enchalada sauce 15 oz
1 cup salsa
1 cup mexican mixed grated cheese
Directions:
1. Place Rice, water, onions, rotel tomatoes, corn, and beans in microwave safe bowl. Heat on high for 8 minutes.
2. stir in enchalada sauce, salsa, and cheese
