Spicy, marinated shrimp skewered and grilled with citrus. Ingredients:
1 lb 31-40 count shrimp, peeled to the tail and deveined |
1 tbsp sriracha sauce |
1 tsp soy sauce |
1 tsp minced garlic |
1 tsp minced ginger |
2 cups segmented blood orange |
1 cup chunked pineapple |
10 skewers, soaked overnight |
Directions:
1. Combine sriracha, soy, garlic, and ginger in a bowl with a lid or a zip top bag. Toss shrimp in mixture and allow to marinate 30 minutes. 2. Remove shrimp from marinade and discard excess liquid. 3. Alternate orange, shrimp, and pineapple pieces evenly on 10 skewers. 4. Preheat your grill and rub with oil or nonstick cooking spray. 5. Grill skewers 2-3 minutes on each side. Shrimp is done when it turns from translucent gray to opaque pink/white. |
