Shrimpy Macaroni and Cheese |

This is an interesting variation of a family favorite, a nice change from plain macaroni and cheese. Ingredients:
1 lb elbow macaroni |
2 tablespoons butter |
3 tablespoons flour |
2 cups milk |
2 cups grated cheddar cheese |
1/4 teaspoon cayenne pepper |
1 lb shrimp, steamed, shelled, deveined |
1 red bell pepper, diced |
1 cup breadcrumbs |
2 tablespoons melted butter |
Directions:
1. Preheat oven to 325 degrees F. Cook macaroni according. 2. to package directions, drain well, set aside. 3. In a sauce pan, melt 2 T butter over medium heat, add flour,. 4. stirring constantly (1-2 minutes). Whisk in the milk and bring. 5. to a boil. Cook until smooth, stirring frequently. Remove from. 6. heat and stir in cheese and cayenne pepper. 7. In a large bowl, toss macaroni with cheese sauce, shrimp, and. 8. bell pepper. Pour into lightly greased 9x13 baking dish. Cover. 9. with bread crumbs and drizzle on the 2T of melted butter. 10. Bake uncovered until golden brown, about 15-20 minutes. 11. Serves 4-6. |
