Shrimps and Scallops in Tomato |

Shrimp, scallops and vegetables in tomato sauce. Ingredients:
16 ounces shrimp |
8 ounces scallops |
28 ounces crushed tomatoes |
14 ounces petite cut diced tomatoes |
3 tablespoons olive oil |
1/2 cup onion, diced |
1 small zucchini, sliced |
1 small yellow squash, sliced |
8 ounces fresh mushrooms, sliced |
2 tablespoons parsley, fresh, chopped |
2 teaspoons garlic, minced |
2 teaspoons italian seasoning |
1/2 cup white wine |
Directions:
1. Saute onion, mushrooms, garlic, zucchini and yellow squash in 3 tablespoons oil for about 5 minutes. Add tomatoes, parsley, Italian seasoning and wine. Simmer 10 minutes. Add Scallops and simmer 5 minutes, add shrimp and simmer 5 additional minutes. Serve over linguine. |
