Ingredients:
additional seasonings (to taste) |
1/2 teaspoon(s) adobo seasoning (penzey's) |
1 pound(s) boiled shrimp |
1/4 teaspoon(s) cayenne pepper |
1 bunch(es) cilantro |
1 teaspoon(s) crushed jalapeno (penzey's) |
1 large can(s) diced tomatoes |
1/2 teaspoon(s) freshly ground black pepper |
1 jalapeno |
1 teaspoon(s) kosher salt |
1 lime |
1 lime (garnish) |
1/2 purple onion |
4 ripe avocados |
1 bag(s) tortilla chips |
Directions:
1. Prepare: 2. Drain tomatoes (reserve juice) 3. Finely dice: onion, cilantro and jalapeno 4. Dice: avocado 5. Cut shrimp into bite size pieces 6. Mix: 7. In a large bowl combine tomatoes, onion, cilantro and jalapeno 8. Add garlic using a garlic press 9. Juice lime and add to mixture 10. Add seasonings and stir to combine. 11. Add diced avocado and shrimp pieces. Stir gently. 12. Chill thoroughly for at least 2 hours. 13. Correct seasonings 14. Serve in individual dishes garnished with lime, cilantro or additional shrimp. 15. Serve with favorite tortilla chips |
