shrimp with wilted spinach

lipton's recipe, this is a quick easy week night dinner
Ingredients:
2 teaspoons olive oil
1/4 cup sliced scallion
2 tablespoons sherry wine or 2 tablespoons white wine
1 envelope lipton recipe secrets savory herb with garlic soup mix
1 cup water
1 lb shrimp, peeled and deveined
1 tomato, diced
2 cups spinach leaves
1/4 cup unsalted cashews (optional)
Directions:
1. heat oil in skillet, add scallions.
2. add sherry, soup mix and water, bring to a boil, lower heat and simmer until it starts to thicken add shrimp, tomato, spinach and cashews.
3. simmer until shrimp turn pink.
4. serve over rice.
